Join us Wednesday, October 25th as we host a night celebrating small and independent craft breweries in conjunction with the Brewer’s Association.  5 Chefs from Texas and Colorado will create dishes to highlight and pair with craft beers from 5 Award Winning Breweries proud to bear the BA Independent Craft seal.  This is one Beer Pairing Dinner you won’t soon forget!

First Course- Tim Rattray 
King Salmon/Apples/Beets
  Ska – Pink Vapor Stew
5% ABV. Brewed with two types of citrus forward hops, apples, ginger, beets and carrots. Lightly sour with high carbonation 
Second Course-Steve Redzikowski
7x Wagyu Tartare/Oak Smoked Cheddar/Dashi & Horseradish Aioli/Charred Red Wagon Sun Chokes & Onion
  Eureka – Mini Boss IPA
Citra and Mosaic hopped IPA. Balanced with malt and right at 7% ABV
Third Course-Adam Dulye
Grilled & Pickled Chanterelles, Winter Squash, Apple & Kale 
  Freetail – Texicali Brown
6.1% ABV classic American brown with notes of roast, malt and medium hop. Finishes roasty and dry
Fourth Course-Steve McHugh
Slow Cooked Beef Short Rib, Capirotada, Dulce de Calabaza & Nopale Gremolata
  Epic – Big Bad Baptist
Big 12% ABV Barrel aged Imperial Coffee stout. Huge roast flavors, barrel and deep dark roast. Finishes creamy and smooth. 
Fifth Course-Kyle Mendenhall 
Persimmon Thunder Cake, Pink Peppercorn Meringue, Lemon Yogurt, White Chocolate, Saison Raisins
  Hops & Grain – Volumes of Oak: Belgian-Style Saison
 5.9% ABV Belgian-Style Saison aged in Oak.  Bright nose with citrus notes, a hint of funk and oak layered in.
