One of the most important parts of “giving birth” to a restaurant concept/idea is being able to convey your vision to the team of people helping you to bring it into existence. As Alex and I continued to dream and set the concept of The Granary ‘Cue & Brew into motion it became clear that we were going to need help. Bon Jovi said it best, “no man is an island”. Truer words were never spoken! As the process of bringing The Granary to life has progressed, we already laugh about some of our initial naïveté and assumptions that now we realize were ridiculous. One of these being, “we don’t need an architect, designer or build team… we’ll just find an old restaurant space and retro fit/modify it for our purposes”. Dumber words were never spoken! While part of that statement could have potentially worked out, it became increasingly clear to us as we talked with The Pearl Brewery that our previous assumptions were not at all feasible. The site we looked at, and fell in love with, was a house that was built in the first decade of the 1900′s. A residential space, with no working utilities, sparsely distributed insulation, and the list goes on and on… basically a “shell”… albeit a beautiful one.

Realizing that design and construction expertise was a necessity rather than a luxury, we got connected with a design-build team that totally understood us in regards to our vision for the space, the look, the feel, the energy; everything that we wanted the space to be (and felt that it needed to be for the concept to really flourish!). We are proud to officially introduce you all to Clay and Kristin Hefty of Wiese-Hefty Design Build; our design-build team! From our first meeting with them it was obvious that Kristin and Clay knew where we wanted to go, and had the insight and expertise to deliver an amazing finished, functional, beautiful restaurant! We clicked so well that Kristin and Clay were finishing sentences and thoughts from Alex and myself, with exactly what we were thinking!

Kristin holds a Bachelors of Architecture Degree from the University of Texas at Austin. Prior to forming Wiese Hefty Design Build she worked for several leading architecture firms, including Leeser Architecture and Kohn Pederson Fox in New York and Lake|Flato Architects in San Antonio. Kristin is a fully licensed architect, a member of the American Institute of Architects and a LEED (Leaders in Energy and Environmental Design) accredited professional.

Clay Hefty has a business degree from Baylor University and over 15 years experience in large project implementation, accounting, and auditing. Clay ensures projects are implemented correctly, on-time and within budget. His primary responsibilities are estimating, maintaining construction costs, communicating project schedule and status updates to clients, processing sub-contractors and permitting. He also ensures projects follow standardized processes and controls and handles construction audits and risk management.
With construction beginning imminently, we wanted to recognize Kristin and Clay for all their hard work. Great people, amazing talent, superior execution… Thanks Kristin and Clay!
